I walked back to the Guesthouse from my office at around 6 PM yesterday. Dr. Rich Williams had arrived from Harare earlier in the day. He lectures in the Faculty of Theology, but lives in Harare. I got acquainted with him last week when he stayed in the Guesthouse for a couple days. He’s not vegetarian, but likes vegetables and fruit. He brought a bunch of veggies with him this time to share with me. Last evening we had the following veggies for dinner: Carrots quartered length-wise; Butternut squash; Pumpkin-leaf greens; Okra, fresh from a neighbor’s garden; Fresh garden salad with lettuce, tomato, cucumber and miniature corn-on-the-cob. We also beans and brown rice as a side dish. What a great veggie dinner!
