I was given a batch of fresh pumpkin leaves this week. As a result, pumpkin greens have been a mainstay for my suppers the last few days. They are tender, delicious, and nutritious. I’ve enjoyed double or even triple servings of these greens for supper the last three nights, along with a few other nutritious veggies. Altogether, they’ve helped me eat at least ten to twelve fruit and veggie servings every day, a marvelous key to vitality. Here’s a picture of my pumpkin greens along with a nice organic tomato, cooked carrots and eggplant cubes, with a bowl of brown rice and lentils on the side. Not shown is my mango dessert. I thoroughly enjoyed this meal!
