When we visited my sister Peg a couple weeks ago, she fixed us an unusual but fabulous veggie stew on brown rice that we loved. When I asked her what it was, she said Chadian Peanut Stew, a dish she had learned to enjoy when she was in the Peace Corps in Chad a few years ago. She brought the recipe home with her and has enjoyed it (with her own modifications) ever since. She was willing to share the recipe with us, and I am posting it on the Ten Secrets Health Club site on Facebook. We had it on brown & wild rice one night, and we had it on mashed potatoes another time. Guess what? I’m going to have it on baked potato tonight. I think St. Patrick would approve!
